Sweet Blackened SalmonI just bought frozen Blackened Salmon @ Sams Club, sprinkled a tiny bit of Splenda on top & grilled it & some mango for the top.

Mango Madness QuinoaJust kinda wing it to your taste, I made this up, so yeah a pinch of this a pinch of that kinda thing. 1 cup Quinoa, 13/4 cups water, 1/2 med. Mango cut into small pieces, 1 lime, 1/4 cucumber cut into small pieces, 1 sweet pepper cut into small pieces, 1/4 small onion cut into small pieces, some crushed black pepper, & some Pico de Gallo con limon(it's a mexican spice)Simmer water & Quinoa covered on low for about 15 mins or until it's tender,  pops in your mouth. All water should be gone. If not done add more water. If you want to cook it quicker you  can boil instead of simmer with 2 cups water. When done add all ingredients, squeeze lime over top, stir & it's ready. I like to eat it cool, or room temp, but it's up to you.ENJOY!
